How to Remove the Choke!
Similar to the center seeds of a melon, the Artichoke also has a center to
be removed before eating. The “fuzzy choke” center can be
easily removed after being cooked. Depending on how you plan to
serve your Artichoke, there are three ways to remove the fuzzy choke:
- Serving a whole, cooked Artichoke as an appetizer is the most
common method, allowing one or more persons to pull off and eat the
individual petals. When you get to the round area at the base, scoop
out the fuzzy top layer and enjoy the Heart! Slice the scrumptious
Heart into bite size pieces.
- An ideal side dish is to take
the whole, cooked Artichoke and
cut it in half from the top through the end of the stem. Use a spoon
and scoop out the fuzzy center of the Artichoke Heart from both halves.
You then have two individual Artichoke servings.
- Spread open the petals of a
cooked Artichoke to expose the
center petals. Pull the tender petals up and out of the Artichoke
so that the Artichoke Heart is exposed. Using a spoon,
carefully remove the fuzzy top layer without scraping away the
Heart. Now the Artichoke is ready to serve or stuff.

Artichokes are such a delicious and versatile vegetable, it’s impossible to
list all the ways you can serve them hot or cold. The list below will give you a good start.
Depending on what size you select, Artichokes can serve as an appetizer, side
dish or in the case of the Jumbo variety, a main entree.
Whole Artichokes
- Cooled Artichokes can be filled with cold salmon, tuna, shrimp or chicken.
- Brush with olive oil and grill until brown.
- Grill to impart a robust smoky flavor.
- Stuff with Italian herb breadcrumbs and smoked Gouda cheese filling.
Halves
- Serve as cold buffet dish.
- Pour balsamic vinegar between the petals and finish on the grill for a spectacular flavor combination.
Stems and Hearts
- Slice Hearts and add to spicy Asian sautés and stir-fries.
- Slice stem into “coins,” deep fry with batter until crispy and dip in mayonnaise.
- Slice and add as a tasty filling to your favorite omelet or quiche.
- Use to create Artichoke dip, one of the world’s greatest appetizers
(and guilt-free pleasures!).
Baby Artichokes
- Quarter Baby Artichokes and add to baked pastas, fish and meat casseroles,
stews, rice pilaf, and quiche.
- Sprinkle with olive oil, garlic and pepper, and oven roast.
